From dumplings to sushi. South Tyrol is a meeting place and at the same time a melting pot of two culinary traditions, the Alpine and the Mediterranean. The talent and creativity of our chef Stefano enables us to offer the delights of traditional South Tyrolean cuisine with typical Mediterranean dishes. With enthusiasm and passion for good food, our chef also likes to create original dishes. The choice is yours.
In addition to cooking, we attach great importance to basic ingredients. When the season allows, we buy exclusively from local and regional suppliers, from cheese to vegetables to meat, where we follow the philosophy “from the top to the tail” and use everything. This is important to us and is of particular concern. For typical non-regional foods, we are committed to buying them directly from carefully selected producers, such as vinegar, Parmigiano Reggiano, olive oil. We pay particular attention to quality and only use products that we would also use for ourselves and our children.
Most pasta is made by us, from short, long, filled egg noodles, made daily by our chefs, meat aged in our cells, organic rice and vegetables from the farmer in summer. Our wine list offers a wide selection of winemakers from South Tyrol, which we have personally selected, but we also have a particularly well-stocked wine list of award-winning Italian wines; in terms of grappa, digestifs and spirits, We are always looking for original and local products.
